Dieu Du Ciel!
Dieu Du Ciel!, based in Saint-Jérôme, Quebec, is a brewery after our own heart. Serious (about beer), prolific, inventive, and original, are just a handful of adjectives you could use to describe these Canadian conjurors.
Brewing there since they opened in 1998, co-founder Jean-François Gravel believes strongly in brewing beers which lead the way in innovation and character. From their Isseki Nicho, an Imperial Stout / Saison hybrid (a colloboration with Shiga Kougen in Japan), to their Rosée d'hibiscus, a vibrant pink-orange wheat beer brewed with hibiscus flowers, the brews making their way from Dieu Du Ciel! are unafraid, bold and interesting; something we constantly aspire to achieve.
What should I try?
Dieu Du Ciel! have a back catalogue of beers that could make you weep with joy. With the fundamental principle that everything they brew should be beer for beer's sake, Dieu Du Ciel! have a huge range of beautifully crafted beers in almost every style your heart might desire. Whether you're a craft beer beginner or a hardened, gueze-for-me-please ale afficionado, you'll find something to entice you. Here is our short guide to some beers you shouldn't miss out on. For a full list of their beers (which we strongly suggest you read) visit their website.
Aphrodisiaque - cocoa and vanilla stout - 6.5% abv
Brewed with organic fair-trade cocoa and first rate vanilla beans, this seductive stout may appear intimidating to those unaccustomed to dark beers, but a fine balance of flavours makes it accessible to most beer drinkers. Recommended by James, this smooth dessert beer has aromas and flavours of vanilla, dark chocolate, bourbon and roasted malt, making it the ideal choice for fans of our own Cocoa Psycho.
Corne du diable - American India pale ale - 6.5% abv
A dry-hopped devil of a beer, Corne du diable is a red-coloured ale with caramel flavours, sharp bitterness and powerful hop aromas. Think somewhere between Punk IPA and 5AM Saint; this beer is perfect for those in love with our signature style of potent hop aroma, addictive bitterness, and light caramel malt flavours.
Blanche du Paradis - wit (Belgian style wheat beer) - 5.5% abv
Lovers of wheat beers will find this aptly named - "white paradise" perfectly describes this light, well-rounded Belgian style wit. Brewed with as much wheat as malted barley, along with coriander seeds and curaçao orange peels, this unfiltered white beer has fresh, baked bread aromas, spicy and citrus flavours, and a touch of acidity.
Rescousse - altbier (German style red ale) - 5.3% abv
Malty up front with accents of toasted bread, the well-balanced hops provide a tongue-tingling finish and give this copper ale with mahogany highlights its freshness, complexity and unique character.
This beer has a noble purpose (beyond simply pleasing all those who consume it). Dieu du Ciel! donate 11 cents for every bottle sold, to the Fondation de la faune du Québec, in support of efforts to save endangered species such as the wolverine, the copper redhorse, and the western chorus frog. In their own words, "Liberté, égalité, biodiversité! Leave indifference behind and make a difference." Visit www.rescousse.org for more information.
